Often referred to as oil-free lecithin, lecithin granules have essentially all the natural soybean oil removed from them.

Lecithin Granules are an excellent source of Choline, with 250mg in just one tablespoon. These nutritious granules have a natural, nutty taste. Sprinkle them on cottage cheese, yogurt, granola, cereal or use as a soup enhancer. You can also add them to fresh salads or fruit. Blend them with your favorite juice, smoothie or other nutritional beverage.

Lecithin possesses emulsification properties. It works well to blend oil and water and other ingredients that don't stick together on their own. Use lecithin for making salad dressings and as an egg replacer in homemade mayonnaises. It is used in bakery items to keep the dough from sticking, and to improve its ability to rise. It produces a tender texture in baked goods‚ especially in whole grain breads. It also extends the shelf life of homemade breads.
